I'm looking for a vegan (duh!), wheat free nut roast recipe which won't use some hugely expensive wheat substitute... does anyone have such a monster? Guest guest Posted August 6, 2009 Report Share Posted August 6, 2009 Hi Peter I haven't had a chance to look at recipes yet, but you could use rye bread or spelt bread instead of wheat in the nut roast recipe. If you have a Maison Blanc near you their bread is made from spelt. Otherwise you could get a small rye loaf or buckwheat loaf from a health food shop. Guest guest Posted August 10, 2009 Report Share Posted August 10, 2009 Peter, This is taken from the book "Cooking Without" by Barbara Cousins: Nutty Vegetable Loaf (Serves 4) 1 onion, finely diced; 1 red pepper, finely diced; 1 dsp oil; 1 medium carrot, grated; 2oz nuts, finely ground; 4oz cooked brown rice (cooked weight); 1 dsp tomato puree; 1/4 tsp each dried thyme, nutmeg and dried rosemary; 1/8 tsp cayenne pepper, black pepper Fry the onion and pepper in the oil until soft and beginning to brown. Add the grated carrot and apple and cook for another few minutes until beginning to soften. Combine all the ingredients and mix well. Place the mixture in a greased loaf tin and bake covered for approx 40 mins at 200 deg C/400 deg F/Gas Mark 6. It's quite tasty and, as you can see, requires no special ingredients. Bon appetit!
