I'm a teacher, too, and I feel your pain.

 

I get tofurky and other vegan deli slices, and some kind of vegan sliced

cheeze (tofutti is really pretty decent.) Mustard, mayo, and bread, and

it's a halfway decent sandwich. I pack a dill pickle, a piece of fruit,

and those baby carrots you get in packages.

 

When I don't feel like a sandwich, I dice an apple, mix in some vanilla

soygurt, add sunflower seeds and dried cranberries. It takes only a few

minutes to throw together. Veggies of some sort (such as baby carrots)

and a roll make a good lunch.

Some crackers and a pot of nut butter; cold rice and pasta salads; bread, salad

and avacado; nuts and raisins; fruit; cold rice pudding; bean pate; cold nut

roast; Redwoods no-cook sausages or chicken-style pieces, pates, meat style

slices.
