I get tofurky and other vegan deli slices, and some kind of vegan sliced cheeze (tofutti is really pretty decent.) Mustard, mayo, and bread, and it's a halfway decent sandwich. I pack a dill pickle, a piece of fruit, and those baby carrots you get in packages. When I don't feel like a sandwich, I dice an apple, mix in some vanilla soygurt, add sunflower seeds and dried cranberries. It takes only a few minutes to throw together.
