Vegan Wonton Skins/Pasta for Raviolis

I have convinced one of my clients (I do restaurant bookkeeping)

to add more vegan items to her menus - she has an Irish pub

and a Mexican restaurant - which she is totally into!

She made some " vegan " sweet potato raviolis the other day using wonton skins and

was completely disappointed when I told her that wonton

skins contain eggs.

 

Can anyone point me in the direction of either vegan wonton skins

or vegan pasta sheets, or a vegan pasta recipe? We're in Los Angeles, if that

matters.

while rare, there are commercial vegan wonton wrappers on the market

i would check a larger asian market in the area.

we've made em both ravioli and wontons from scratch in the past..i'll see if i can find the recipe

And everyone got excited about the technology. And I guess it was pretty incredible watching a missile fly down an air-vent. Pretty unbeliveable.
