I checked out that one from the library at the same time as The vegan table : 200 unforgettable recipes for entertaining every guest at every occasion by Colleen Patrick-Goudreau. There are so many new vegan cookbooks! I haven't made any recipes from either yet, but I copied down a few that looked interesting before I returned the books. The book had several sausage recipes, but the one I wrote down was Cherry Sage Sausages. The main ingredients are navy beans and wheat gluten, with lots of herbs and spices, liquid smoke, nutritional yeast, and dried cherries. The dough is molded into a 5-inch-long log, wrapped in tinfoil, and steamed, then sauteed or grilled. It sounds like an easy recipe, once you assemble all the ingredients.
