There are lots for potato and leek soup, which is lovely, but not for main meals. We make a vegan paella using leeks, and we put them in a veggie crumble. Sometimes we just serve them with a meal. What's used with the leeks varies every time but in our house the most popular pasty (even with the omnis) tends to be leek and potatoes, with a handful of those vegan soya bacon 'bits' thrown in, and a white sauce, wrapped up in pastry. Other nice fillings to go with the leeks are button mushrooms, chick peas, lentils etc. I used to add quorn pieces sometimes before I was vegan but tofu would work instead. I used to make the pasties with ready made puff pastry but I'm not sure if that is vegan, however I've also made it with home made vegan shortcrust pastry and that was delicious. I also do a vegetable stew on a regular basis which uses any spare veggies out of the fridge but it's always especially nice if there are leeks in it. It's actually from a vegetarian student cook book but it's one of my most often cooked meals. I usually use onions, leeks, garlic, carrots, parsnips and potatoes, browned off a little in olive oil, then add some flour for thickness, vegetable stock, tomato puree, some herbs, mushrooms if you have them, red wine if you want it rich and don't mind using wine in a stew. Simmer for about half an hour and then add some dumplings made with vegan suet, flour, dried herbs and a splash of water. Another 20 minutes with a lid on to steam the dumplings and you're ready. It's also nice with swede, turnip, sweet potato, squash, a handful of baby spinach, etc. It's so nice that even my staunchly omnivorous husband asks for it on a regular basis. Guest guest Posted October 19, 2009 Report Share Posted October 19, 2009 bake em, broil em, fry em, soup (good with mushrooms, as well as the ubiquitous potato), risotto... boil and simmer em with fresh herbs then bake the mixture for 30 minutes, let cool, remove leeks and reboil liquid. add olives and olive oil, maybe some chopped walnuts, a little lemon juice maybe, a tomato, etc... heartwerk Oct 19, 2009 2:58 AM Leeks I have been looking on the internet for vegan recipes using leeks. Pretty unbeliveable. But couldn't we feasibly use that same technology to shoot food at hungry people? You know what I mean? The frozen JusRol pastry is vegan, I'm not sure about the chilled. I always make my own shortcrust pastry, but can't be bothered with making puff pastry - so buy that ready made. I'm going to try out your mushroom and nut pie - it looks like a delicious recipe! I've been meaning to look for a colcannon recipe for a while (didn't realise it had leeks).
