I haven't made it yet, so I can't tell you for certain that it will work. But, it looks great. It's from the Follow Your Heart company, the one that makes Vegan Gourmet products. Here it is: Angel's Heavenly Vegan Cheesecake Crust 1 1/2 cups graham cracker crumbs 3 tbsp vegan margarine, melted 3 tbsp unrefined sugar Filling 5 8-oz tubs Vegan Gourmet cream cheese alternative 1 cup Vegan Gourmet sour cream alternative 1 cup unrefined sugar 2 tsp vanilla extract 3 tbsp + 1 tsp arrowroot powder or cornstarch Preheat oven to 325 degrees F. Grind graham crackers to the consistency of coarse flour. In a medium bowl, mix graham cracker crumbs, melted margarine and 3 tbsp of sugar. Press mixture into the bottom of a 9-inch springform pan. In a large bowl, mix the cream cheese alternative, sugar, vanilla, and arrowroot powder or cornstarch with an electric mixer until well blended. Add the sour cream alternative and mix well. Pour mixture over crust. Bake at 325 degrees F for 35 minutes. The cheesecake should be slightly browned and a little wobbly in the center. To decrease cracking, place the pan in a waterbath while baking. Cool for at least 6 hours or overnight. I get the impression graham crackers are basically a lighter and less sweet version of a digestive biscuit.
