I cannot find sweet potatoes near my home, but yams are always available. Since yams are less sweet, will I need to add more sweetener to the recipe? Judy " I just got out of the hospital. " True (that is, botanically true, of the genus Dioscorea) yams are almost never available here. So yes, use " yams. " I've found all varieties to be very sweet, so I wouldn't add extra sweetener. You can taste them after they're cooked and see if you need them to be sweeter. I've found that roasting or baking, as opposed to boiling or steaming, makes them taste sweeter (caramelizes or concentrates the natural sugars?).
