Blog: Hypoglycemics do better on vegan diets than vegetarian

I was trying to go vegetarian, but then I found out I have a casein-intolerance.

I thought, well, I'll eat eggs and other stuff. Still wasn't thriving. I've

tried many different things, and it will simply take time to share all of it. I

think I have a scope I can work with, and I just have to work out the tweaks.

 

Luckily, I'm divorcing. I have a job that may work into a full-time position.

Then, I can just fill my own pantry with whatever I need! BUT, for now, we have

ONE budget, and ONE household and ONE DIET. Eating meat and eggs are simply not

an option for me. Over several years I have developed a moral consciousness

regarding the consumption of these items, and the more I delve into veganism

(last month now) the more I find myself agreeing with vegan values.

 

So, my family seems to do well on a primarily vegetarian diet--I've started

there. They love Dawn Blatner's Brussel Sprouts and Potatoes, they're accustomed

to Yellow Rice and Bok Choy (and they no longer grudge it!), and of course, they

LOVE Vegetarian Enchiladas made with broccoli blended in a food processor with

tomato sauce. BUT, that's as adventurous as they get. Vegetarian (vegan) Tom

Yum Soup doesn't sit will, Pad Thai and Dals are rejected by the kids

wholeheartedly, and Lentil Loaf is dubious.

 

My specific challenges are, with where I am at (according to Schwarzbein's

Principles and Hypoglycemia for Dummies), I can't get away with more than 30

carbs per meal. My metabolism just won't tolerate it.

 

I have read forums though, where some people eat beans for breakfast! I would

love to do that--without sugar or eggs. Anyone here eat beans for breakfast? Or

have any other helpful information?

can you eat many small meals through out the day, as opposed to three big meals?
