Guest guest Posted February 11, 2010 Report Share Posted February 11, 2010 For 2 people, mix one mug of any sort of plain flour and 1 level teaspoon of baking powder in a large bowl. Add one mug (same size) of soya milk and a mashed ripe banana and beat well with a wooden spoon. (You can use a mixer but it's no quicker and it's easier to wash a bowl than a mixer. You can also omit the banana but it definitely improves the flavour.) Makes 2 biggish or 3 smaller pancakes each. Serve with maple syrup or fruit salad and plain soya yoghurt (e.g. Yofu). They keep you going all morning and are suitable not only for vegetarians and vegans but for all cultures, e.g. Hindus, who do not eat eggs, as well as those with an intolerance to dairy products.
