Guest guest Posted February 17, 2010 Report Share Posted February 17, 2010 I use nutritional yeast in almost every recipe that would taste good with a slight cheese flavor. beans & rice, burritos, tacos, soups. I use it in seitan and veggie burger patties. I also have a cheese (queso) sauce recipe that uses it. I have tried using vegan marshmallows in the original recipe, but it just doesn't work as well. I never even thought to use corn syrup and sugar instead. I noticed the recipe says to use light corn syrup and sugar. You could try it without the sugar, though I never have. I've also substituted brown rice syrup for the corn syrup. It worked, but the bars were a lot stickier and harder to cut. This is not a terribly healthy snack, so I figure if I make scotcheroos I live with the corn syrup and sugar and endure it like a woman. It's not for the faint of heart.
