Pancake Day

No I had toast this morning. I have my own bread machine and make great homemade

toast. But usually have bananas in my pancake.

We like maple syrup too but for variety we also use fruit, cooked down and

sweetened with agave nectar. In the summer we add a little bit of mint too. I

like the idea of lemon and sugar. I'll have to try that.

That’s strange. I have had it since I was a child. I know my

great grandmother did thenm that way, and she was born in about 1859, so it’s

not a new thing.

lemon and sugar is a traditional british thing. never seen it on this side of the pond.

also, the pancakes are more like what we would call crepes. very thin

its caster sugar..here we call it superfine sugar

Jo, I understand completely! I was born in England and moved to Canada when I

was very young but from that heritage that's the way we always did the crepes as

well. It was my Nan that lived with us when I was little and that's how she did

it. When I introduce that to friends they think it's weird until they try it.

I have never done them any other way. I love the crispy edges and soft centres

and when rolled with lemon and sugar they are absolutely delicious. I find the

thicker, flatter type more like Yorkshire pudding.

Yes. They are quite thin. I sprinkle the lemon juice right

across them, then the sugar, then roll them up and eat with a spoon and fork.

I like pancakes, so I usually have four. I think that would probably be the

equivalent of two of the ones I have seen in Little Chef, which are served flat

with fruit and ice cream.

Lemon juice is supposed to be very good for you – helping with

digestion, and keeping colds at bay.

when I was very young but from that heritage that's the way we always did the

crepes as well. It was my Nan that lived with us when I was little and that's

how she did it. When I introduce that to friends they think it's weird until

they try it.

I use a lot of lemons and have a lemon tree that is finally old enough to produce fruit this year. I left the most wonderful lemon tree in Arizona when I moved back to California and I've missed those lemons so much. They were big and juicy and had just the perfect flavor and tartness.
