(Last night I had roasted asparagus, sweet potato, cauliflower, and red onion, served on top of a pile of shredded raw kale.) Rice cakes with nut butter and fruit slices. If you make your own hummus, you can use different beans: white bean hummus, or black bean hummus. Add some red peppers to it, or different herbs and spices. One sandwich I found in a cookbook that sounded so unusual I had to try it: Take 2 pieces of bread. Spread tahini on one slice and mustard on the other. Drain sauerkraut. Assemble sandwich with kale and sauerkraut. I liked it. Sliced sweet potatoes make a good sandwich filling, but are very moist so don't travel well with bread. Roasted red onion is very sweet and doesn't give you onion breath, but still adds some crunch to a sandwich. Guest guest Posted February 25, 2010 Report Share Posted February 25, 2010 How about avocado, black pepper and tomato (with or without vegan mayo)- it's lovely in seeded/granary bread.Smoked tofu is good, and if you like rocket or sundried tomatoes, those two things give a good 'kick' to a sandwich.Rroasted vegetables have already been mentioned- I agree, it's so easy when you've done them already for dinner. That's my problem as well, I need more ideas. I have a couple of cookbooks but to be honest, as I'm not the greatest cook, I find some of the recipes quite daunting. In North America, we have a brand called Toby's Tofu Pate. The lite version is vegan.
