sandwich fillings -suggestions please

do you like tofu? sauteed or fried tofu (i never said it was healthy)

a million spreads, from veganaise to tofutti cream cheese to tobaouli

how about a sprout sandwich with your fave spread?

my morning meal for like a year was a toasted bagel with sprouts and a sliced tomato

peanut butter?

roasted red peppers, garlic and tomatoes on a crusty italian bread or the like

grilled mushrooms, grilled portabella mushrooms

then there are the myriad of meat analogs out there if you do those...veggie burgers, veggie roni, vegan cheeses, vegan slices etc and so forth ad naseum...................

Roasted vegetables, either as a sandwich filling or a salad. You can

make extra for dinner and use the leftovers. (Last night I had

roasted asparagus, sweet potato, cauliflower, and red onion, served

on top of a pile of shredded raw kale.)

 

Rice cakes with nut butter and fruit slices.

 

If you make your own hummus, you can use different beans: white bean

hummus, or black bean hummus. Add some red peppers to it, or

different herbs and spices.

 

One sandwich I found in a cookbook that sounded so unusual I had to

try it: Take 2 pieces of bread. Spread tahini on one slice and

mustard on the other. Drain sauerkraut. Assemble sandwich with kale

and sauerkraut. I liked it.

 

Sliced sweet potatoes make a good sandwich filling, but are very

moist so don't travel well with bread.

 

Roasted red onion is very sweet and doesn't give you onion breath,

but still adds some crunch to a sandwich.

How about avocado, black pepper and tomato (with or without vegan mayo)- it's lovely in seeded/granary bread.Smoked tofu is good, and if you like rocket or sundried tomatoes, those two things give a good 'kick' to a sandwich.Rroasted vegetables have already been mentioned- I agree, it's so easy when you've done them already for dinner. I just bung them in a tomato sauce (blended, as that's how my little ones eat it!) and mix it with pasta or quinoa, as I get a bit bored of sandwiches every day...I know it's not so virtuous as most vegan fillings... but I love that 'bon maman' jam and strawberry jam, with 'pure', on seeded bread is fab!Beasylvana_santucci <sylvana_santucci Sent: Thu, 25 February, 2010 12:10:20 sandwich fillings -suggestions please

Wow, thank you for asking the question on lunch ideas. I had completely

forgotten about making a BLT. That's my problem as well, I need more ideas. I

have a couple of cookbooks but to be honest, as I'm not the greatest cook, I

find some of the recipes quite daunting. This post helps me as well, so thank

you. I need to find like " Vegan cooking for dummies " or something like that,

LOL.

I'm all about convenience, so here are some ideas from an on-the-go gal:

veggie deli slices, vegan cheeze slices, ready-made tofu salad are my

go-to choices. In North America, we have a brand called Toby's Tofu

Pate. The lite version is vegan. It looks a little like egg salad, and

it's scrumptious.
