Bake them (even red ones), either whole or cut into pieces. I like to cut into 2-inch (more or less) pieces, put on a baking sheet (no oil), then bake at 350F until done. The rougher and more jagged the edges, the more likely they'll get a little crispy.I could eat this every day and never get tired of it, but it's too easy to overeat, so I don't. Potato salad -- an especially good use of red potatoes. I generally steam the potatoes, let cool, then add whatever I have on hand -- celery and red onions, especially. If I make a sauce/dressing, it's usually soft tofu in a blender with garlic and other spices. (That sauce is also good on baked potatoes.) But I've also been using more peanut sauce lately, and I'd be tempted to try it with potatoes, maybe. A curry sauce with nutritional yeast would be good (you can look up recipes for aloo gobi, curried cauliflower and potatoes). Somehow, with my year-round supply of all the kale I can eat (and more), I've never gotten around to making colcannon -- kale and potatoes. I've heard potatoes are good for thickening soup, but I haven't used them in soup at all because I've heard they make soup spoil faster. Potato bread. Medley of roasted vegetables.
