People have been eating cucumbers for hundreds of years as a natural coolant. Cucumber juice contains 40% potassium, 10% sodium, 7% calcium, 20% phosphorus and 7% choline. It is also an excellent source of silicon. Cucumber juice is not only good to drink, but is also good to rub on your skin, giving it more elasticity, which results in a more youthful complexion. It is also suspected to help in reducing hair loss. When buying cucumbers for juicing, look for non-waxed, which allows you to juice the cucumber in its skin. Look for firm cucumbers with a dark green, wrinkle-free skin. Cucumbers will store in the refrigerator for 6 days. Cucumber juice is usually mixed with other juices. Here in Alaska, it is still early spring and day time temps are in the 40s and 50s, so the fresh produce is so wonderful and definately a gift from God.
