The house smelled fabulous while it was cooking, and I was not disappointed when I tried some! Very yummy, filling, and warming. Fantastic for a cold, snowy evening. Recipe is below Megan AMAZING Vegetable Soup 1/4 c olive oil 1 lg onion, chopped 3/4 c celery, chopped 3/4 c carrots, chopped 3 cloves garlic, chopped 1 tsp crushed red pepper, optional salt & pepper, to taste 1 lg and 1 12-oz can diced tomatoes 4 c vegetable boullion (found in stores next to the beef & chicken boullion cubes) Fresh basil, chopped, to taste, or 1 tsp dried basil 1 c fresh green beans, cut 2 cans cannellini beans, drained & rinsed 1 bunch fresh spinach, torn Parmesean cheese, grated (optional) Heat oil in soup pot. Add onion, celery, carrots, garlic, crushed red pepper, salt & pepper. Cook on med heat until onion is clear, stirring often, about 10 mins. Add tomatoes, bouillion, and basil, bring to soft boil, cover, simmer about 10 mins. Add green beans, bring to boil, cover, simmer 10 mins. Add cannellini beans, bring to soft boil, cover, simmer 10 mins. Add spinach, bring to soft boil, simmer 5 minutes. Serve topped with parmesean cheese & hot crusty whole-wheat bread. ENJOY!
