Guest guest Posted December 20, 2009 Report Share Posted December 20, 2009 CANDIED RIND 2 grapefruits or 3 oranges or 6 lemons 1/2 teaspoon salt 1 cup granulated sugar 3/4 cup water 2 tablespoons light corn syrup Additional granulated sugar Remove rind in large pieces or use rind from fruit that has been squeezed for juice. Cover rind with cold water; add salt and boil, uncovered, for 20 minutes. Drain and rinse. Cover with fresh water and boil 15 minutes; drain well. With spoon scrape out any ragged membranes. Cut rind into thin strips. In large saucepan, mix sugar, water and syrup. Bring to a boil; add rind. Boil gently, stirring often, until most of syrup is absorbed.
