Guest guest Posted December 22, 2009 Report Share Posted December 22, 2009 Sweet Garden Peas With Mint 3 large lettuce leaves, shredded 2 tablespoons scallions, minced 1 teaspoon butter 1/2 teaspoon salt 1/4 teaspoon pepper 30 ounces frozen tiny peas, thawed 1/2 cup water 2 tablespoons shredded fresh mint Place lettuce in a heavy medium pan. Add scallions, butter, salt, and pepper. Cover and cook on high until steam starts to rise. Add peas and water. Cover again, bring to a boil, then lower heat and simmer 10 to 15 minutes or until peas are tender but still retain their bright color. Stir in mint, cover, and steam 1 minute.
