Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 Hi all I am preparing a recipe using dried kidney beans to eat on Boxing Day, but as the recipe gives quantities for 6-8 people I thought I would freeze the left-overs. I was wondering though, given the issues around poisoning from improperly cooked Kidney beans, if it was okay to freeze them? Many thanks -- P Save paper - do you really need to print this email? Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 Tony, As I understand it, Kidney beans are only *poisonous* when eaten *raw* . They should *not* be sprouted. They should be soaked overnight and boiled until soft. All beans should be sorted and cleaned, rinsed before cooking. I do not cook beans in the same water that they have been soaked. All beans, if not eaten the first day should be refrigerated and eaten or frozen by the 3 rd. day. The rest of the family will be eating regular chilli, and I am hoping they will be tempted to trying the vegan alternative, wouldn't be a great advert if they ended up in A & E afterwards!! Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 The recommendation over here is that kidney beans should be boiled rapidly for a minimum of 15 minutes, then you can cook them how you want. In fact that is the recommendation on all packets of beans that I buy here. Lots of people in the group don't seem to bother but I feel it's better to be safe than sorry! I freeze them when cooked and there has never been a problem with that. " and sometimes I don't follow them, but do it a different or fast way. So glad you're mentioning this!
