Red Kidney Beans

Hi all

 

I am preparing a recipe using dried kidney beans to eat on Boxing Day, but

as the recipe gives quantities for 6-8 people I thought I would freeze the

left-overs. I was wondering though, given the issues around poisoning from

improperly cooked Kidney beans, if it was okay to freeze them?

Tony,

As I understand it, Kidney beans are only *poisonous* when eaten *raw* . They

should *not* be sprouted.

They should be soaked overnight and boiled until soft. All beans should be

sorted and cleaned, rinsed before cooking.

I do not cook beans in the same water that they have been soaked.

All beans, if not eaten the first day should be refrigerated and eaten or frozen

by the 3 rd. day.

Thanks for the info Deanna, now I can make the Chilli today for eating

on Saturday. The rest of the family will be eating regular chilli, and I

am hoping they will be tempted to trying the vegan alternative, wouldn't

be a great advert if they ended up in A & E afterwards!!

The recommendation over here is that kidney beans should be boiled rapidly

for a minimum of 15 minutes, then you can cook them how you want. In fact

that is the recommendation on all packets of beans that I buy here. Lots of

people in the group don't seem to bother but I feel it's better to be safe

than sorry! I freeze them when cooked and there has never been a problem

with that.

Normally speaking I think of directions kind of as " well, if you want to do it

this way, that's good... " and sometimes I don't follow them, but do it a

different or fast way. So glad you're mentioning this! Cindi

Me too, but I vaguely remembered some talk a while ago about problems

caused by cooking kidney beans in slow-cookers, so I thought I had

better check first!
