Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 PINK GREENS AND BEANS SOUP 1 tablespoon olive oil 1 clove garlic, minced 1 large bunch of red Swiss chard, washed and coarsely chopped 1 can of white northern beans, rinsed 1 14 ounce can broth Fresh ground pepper (to taste) Parmesan cheese, grated, to garnish Heat the olive oil in a 4-quart saucepan, and sauté the minced garlic over medium heat for two minutes. Add the chopped chard and cover. The chard will fill the pot but cooks down quite a bit. Stir it around so it cooks evenly for about 10 minutes.
