Laura A Question about Pecan Pie recipes

Hi Laura,

Sorry it has taken me so long to write you about your pecan pie, but this being

Christmas week, has been sorta hectic. But I kept your email at the top of my

list to respond to, but this is the first instance I have had all week to try

something out for your problem. I have some Agave Nectar that I picked up last

time I was at my health food store, and I had never tried it. I had heard of it

from somebody on one of my veggie lists. Well, I just now went in to taste it

for you, and I believe you can successfully make your pecan pie with Agave

Nectar instead of corn syrup. It has a very mild taste, with just the slightest

touch of a fruit taste at the end of it - and I mean the SLIGHTEST taste. If I

weren't examining it for taste, I would have missed it. But I wanted to be able

to give you the most thorough taste test I could for you. It is not quite as

sweet as pure corn syrup, it is more like maple syrup in consistency, maybe a

little thicker than maple syrup, but it is delicious, and now *I* know what it

tastes like, I know what I can do with it, too. And I think I may make a pecan

pie with it either today or tomorrow. Depending on when we have to be at my

daughter and son-in-law's house for our Christmas. My son-in-law has to work

today from 9AM-1PM, so we have to be there around 2PM, but they have predicted

an ice storm here until 4PM, so I don't know what we'll do. And I still have to

take my shower, and to bake some doggie treats for her dogs. They are soft

doggie treats, because her dog has had to have all of his molars extracted, and

all of his front teeth extracted, and all he has left is his canine's. So he

needs a soft treat that he can gum to death. So I am going to go get my shower,

and then while my hair is up in a towel, I'll start the batter and preheat the

oven, then go back and blow dry my hair, and then come back up and make 1 " balls

out of the dough and press them with a fork and then bake them, and let them

cool. Then I have a box ready to put them in, and tie a ribbon around the box,

and they are ready to go.

 

Good luck with your pecan pie! Let me know what you have decided about it, and

if you decided to change away from a pecan pie, maybe now you can try it with

the agave nectar.
