I am the only one in the fam a veggie, but my sis just became pescatarian (taking baby steps). I would love to make some things for her, but she won't eat " leftovers " . (Well that is the line of boo hoo he gave me, not necessarily the truth.) Good thing I have time to cook more beans and make more tortillas for OUR dinner or we'd be having PB & J for dinner tonight. Could you please post your recipe and instructions on how to make them? And then how to cook them? I love enchiladas, and would love to be able to make my own tortillas for them. For that matter, I've never made my own flour tortillas either! So if you have a recipe for those too, that would be nice. Do I need a special cooking device for these? I'm on Weight Watchers and trying to watch my intake of fats, so I'd prefer to bake mine than fry them, if at all possible. Thanks!
