Green tea is bitter as it sits. Now jasmine green is less bitter. I also enjoy the African honeybush and the red roobios. Well, tea has three stimulants, all in the caffeine family.. Green and white tea has much less caffeine though.. I believe if someone has a sensitivity the the caffeine in coffee and dark teas, maybe you could sleep better, if you do not have a sensitivity to the other stimulants.. Another angle is that we all build up a tolerance to these stimulants if we have them everyday (then we can sleep better too).. Lastly, I believe white tea should be brewed at 180 (google for more), and green tea from 140F to 170'ish.. Even decaf has a tiny bit (decaf doesn't have enough to keep me awake, though). I think white tea has so little that it won't affect me, but I sure wouldn't drink regular black tea before bed. Here's a question for you.... how do I tell how hot my water is? What kind of thermometer do I use?
