Don't let the name fool you. It's delicious. If you want to make this vegan decrease the sugar by 1/4 cup and substitute the eggs with 1/2 cup plain soy yogurt " Cantaloupe Bread " 1/2 of a medium cantaloupe, pureed in blender to make one cup. 1/3 cup canola oil 1 cup sugar 1 tsp. vanilla 2 eggs, slightly beaten 1 1/2 cups all purpose flour 2 tsps.baking powder 3/4 tsp. cinnamon 1/4 tsp. salt 1/2 cup coarsely chopped walnuts or pecans (I used walnuts) Preheat over to 350 degrees. Generously grease bottom only of a 9 X 5X 3 inch or 8-1/2 X 4 X 2-1/2 loaf pan. Cream sugar, oil and vanilla. Add eggs and cantaloupe puree, and mix. In separate bowl sift flour, baking powder, cinnamon and salt. Add dry ingredients to wet mixture and mix until blended. Stir in nuts. Place batter in prepared pan and bake 45-55 minutes until golden brown. Test by inserting toothpick in center and it comes out clean. Cool 10 minutes on wire rack. Loosen sides with knide and remove from pan to rack and completely cool. Through violence, you may 'solve' one problem, but you sow the seeds for another.
