General Tsao's Tofu            1 box of firm or extra firm tofu 1 egg or substitute 3/4 cup cornstarch vegetable oil for frying 3 chopped green onions 1 Tablespoon minced ginger 1 Tablespoon minced garlic 2/3 cup vegetable stock 2 Tablespoons soy sauce 4 Tablespoons sugar red pepper to taste 1 Tablespoon sherry (optional) (you can sub apple cider or white grape juice) 1 Tablespoon white vinegar steamed broccoli cooked brown rice Drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before to get a more chicken-like consistency, but it isn't necessary. Mix the egg with 3 tablespoons cold water. Dip tofu in egg/water mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 Tablespoons vegetable oil in pan on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly. I use TVP a lot, it's very easy to cook with and genuinely has no flavor on its own (unlike tofu, I think). Guest guest Posted January 4, 2010 Report Share Posted January 4, 2010 I drain the water out of my Tofu , then freeze it, when I ready to use it I cut it up appropriately, deep fry a little, then marinate it for about 90 minutes or so in vegetarian chicken - beef - broth, then I put it into whatever recipe I happen to be using. Keep trying different things, you may find something you like. I recently tried a tofu salad, which is basically an egg salad, but with tofu. It wasn't bad at all. Guest guest Posted January 4, 2010 Report Share Posted January 4, 2010 We freeze, thaw, drain, and marinade ours. I use a mixture of soy sauce, ginger, pepper, garlic powder, and onion powder. I used to pan fry it, but now I am trying to cook healthier so I bake it. I spray nonstick spray on the pan and bake for 30 minutes (or until brown and as crisp as I want it). 15 minutes on each side. I can then use it in sandwiches, stir fry or whatever I want to do with it. The important thing to remember is that tofu does not have much of a taste by itself. Guest guest Posted January 10, 2010 Report Share Posted January 10, 2010 Get the firm water packed tofu cut it into bite size pieces and toss it with 3 tbsp dark soy 1 1/2 tbsp seasame oil throw it in the fridge overnight and pan fry it. In Malaysia we get fresh Tauhfu so it may be different. Here's one of my versions - Sweet sour style. Drain tauhfu. Cut into 1 " squares fry lightly in oil till firm. Make sauce with onions, ginger, garlic, tomato and chilli sace - add sugar if required ot to taste. Pour over fried tauhfu. Do not make sauce too watery so it coats well with left over - eaten with rice and any other veges - great.
