Cook on top of stove until crispy. To make crispy on the top I put under the broiler. Use what veggies you have on hand to top. While cooking the potatoes saute the veggies - I used onions and a red bell pepper. Place potatoes back on stove top and add saute'd veggies on top. Add mozeralla cheese on top - let melt - done.
