Guest guest Posted January 9, 2010 Report Share Posted January 9, 2010 Orange and Honey or Maple Syrup Glazed Carrots Serves 4 2 teaspoons butter 1 1/2 cups water 3/4 pound baby carrots 1 cup orange juice 1 tablespoon honey or maple syrup pinch of white pepper In a large pan, bring the butter and water to a boil over high heat. Add the carrots and reduce the heat to a simmer. Allow the water to reduce by half, then add the orange juice and honey. Continue to simmer for 10 to 12 minutes, or until the carrots are tender. Remove the carrots and set aside. Raise the heat and reduce the liquid to about 1/2 cup. The liquid should be thick. Return the carrots to the liquid. Season with white pepper and serve.
