need easy TNT aloo (alu?) gobi recipe

our organic CSA veggies box this week had HUGE cauliflower and potatoes in

it......I love aloo/alu gobi @ Indian restaurants but have no idea how to

make it - anyone know of an EASY way with household ingredients? everything

I've look at online has a million spices I've never heard of.....thanks so

much!

Dear Alexa,

I am pleased to forward recipe for Alu Gobi

Ingredients for Vegetable

 

1    Cauliflower 1kg

2    Potatoes 1/2kg

3    Tomatoes 200gms

4    Onion 200 gms

 

Spices

Bay leaf 2-3 leaves (Skip it if not available)

Cinnamon stick about 25mm long

Black Pepper about 10-15 Nos grounded

Cloves 3-4 pieces

Cummin Seeds 1Table Spoon

Fenugreek Seeds 1/6th Table Spoon

Turmeric Powder 1/2 Table Spoon

Coriander Powder 2 table spoon

Aesfoetida small pinch

Salt and paprika to taste

 

Oil 3 -4 tablespoon

 

Wash Caulifower in lukewarm water cut in to small florets

Peel potatoes and wash thoroughly

Chop Onions and tomatoes separately

 

In a skillet put oil and heat to high temperature, then in low flame add onions

til they become transluscent, add cumin seed and fenugreek seeds and aesfotida,

when slightly done add Coriander Powder and Turmeric powder now after they are

roasted add all other spices, add one cup of water. Now add potatoes and

cauliflower, now raise flame to high medium and let it cook for 20-30 minutes

with lid on, in between keep tossing sides of vegetables so they are not

overcooked from one side. Now add tomatoes till tomatoes mix up fully as an

ingrdeient. Now your Aloo Gobi is ready. Enjoy it
