I look forward to seeing all your yummy recipes and hearing your advice. Personally, I'm not a big fan of beans (weird for a vegetarian, I know), but I LOVE this bean salad, and so does everyone else...including my kids. Black Bean, Corn, and Tomato Salad One can of black beans, rinsed One can of corn, drained One pint of tomatoes (cherry or grape), halved Two tablespoons of red wine vinegar Two tablespoons of olive oil 1/4 cup of red onion, chopped One clove of garlic, chopped 1/4 cup fresh basil, chopped or one tablespoon of dried basil Salt to taste Black pepper to taste I usually put the vinegar, olive oil, onion, and garlic together in my food chopper, then pour it over the rest of the ingredients.
