Seitan questions

Hi! I bought some seitan in my health foods store about a month ago, for the

first time. I'd never tried it before. I brought it out of the refrigerator to

use, and noted the date stamp on it said to use or freeze by a date that was 3

days earlier than the date it was then. I didn't know whether it would still be

good to use or not, so I stuck it in the freezer. Does this stuff go bad

quickly? I bought another package with a longer shelf life and put it in my

refrigerator and am going to use it tonight, well within its time limits. But

should I toss the one I put in the freezer, since I went over the " use by " date

by 3 days? I don't want to poison anybody!

Secondly, does anybody have a recipe or can tell me how to fix this so that it

resembles like a swiss steak or country fried steak? That is about the only way

I'm going to be able to get my husband to eat it. He is veg too, but doesn't

like " veg " food - seitan, which he has never tried, tofu, tempeh - all of which

he does not like. So I thought if I could make it come out in a way that he

likes, he might give it a try. As for me, if it is fried, I really can't have it

- I'm on Weight Watchers, and have to watch my calories and points. But if it

will get him to eat it - to try it even, we're ahead. He is a skinny-minny, and

could use all the calories he can get.
