LIGURIAN STYLE PASTA (LIGURIAN IS A REGION IN ITALY) Meatless recipe This is yummy and good, easy to make, no meat, I served it with Garlic Bread. 3/4 pound fingerling or small white potatoes (I used small white potatoes) 1 pound spaghetti 3/4 pound green beans, trimmed and cut into 1 " pieces 2/3 cup prepared basil pesto 1/2 cup grated Parmesan cheese (optional) (I used Parmesan cheese) Place potatoes in a large pot of lightly salted water. Bring to a boil. Reduce heat and simmer 20 min. or until tender. Remove potatoes and keep warm. *Into the simmering water, add spaghetti and boil 4 min. Add green beans and cook for an additional 5 min. or until tender. Drain, reserving of 1 cup of the cooking liquid. *Return spaghetti and green beans to the pot. Cut the cooked potatoes into bite size pieces and add to pot. Stir in pesto and 3/4 cup of the reserved cooking liquid. Serve immediately with Parmesan, if desired. MAKES 6 SERVINGS OF PASTA...
