They all say to use either a pasta machine or roll with a rolling pin and cut with a sharp knife. It is so hard to get the pasta even and then enough that I gave up and bought a pasta machine. It is hand crank one, but it works. I will share a recipe gladly but I can't vouch for the results. Basic semolina pasta calls for 1 cup of durum semolina and 1/3 cup waterl Kneed for 1o minutes adjusting the water or flour to achieve the proper consistency. Roll on a warm floured surface until a uniform 1/16 inch uniform thickness is obtained. Cut into desired thickness. Another Basic Semolina Pasta for an egg noodle is 1 cup semolina, 1 egg 1 tablespon olive oil and up to 1 tablespoon water, as needed. The rolling instructions are the same, but don't call for a warmed rolling surface.
