This is a change for the rest of my life so I'm adapting carefully to avoid relapses. My goal is to become a true vegetarian. One of the experiences I'm enjoying most since going vegetarian is, believe or not, food prep. I've never been much of a cook but this diet change is forcing me to spend the time, get creative and enjoy the process! Looking forward to reading some good info and advice and hope, once I've gained a little knowledge, I can contribute as well. You have asked me to tell you a little about myself so I will though I look forward to reading your forum to get a better idea of your members and what you normally talk about. Forgive me if I say something that is not acceptable, not yet knowing what I should about your forum. I guess, I am primarily interested in eating the most healthy I can. Being in the best health I can be in and age as gracefully functioning as possible. I am hoping to learn about different foods and preparations of vegetables. I am a simple cook, and I love to get ideas on how to use vegetables differently. I will share what I cooked mostly this summer, though I do not measure and often vary what I throw together. I am sorry I cannot be more " precise " in my " recipe " . Cheri's roasted vegetable melody. I use a large roasting pan ( I always cook for an army, even though it's just my husband and I. We do love to eat and love having leftovers to eat ) Oven at 325. I spray the pan with olive oil type pam then layer with this mix: Small broccoli florets ( around 5 cups or so) pour a little Extra Virgin Olive oil over the florets sprinkle a can of sliced olives over that slice zucchini ( about 5-6 small/medium ) over that sprinkle another can of sliced olives over that cut up 5 large portabella mushrooms over that then slice up 4 red peppers and 3 orange and 2 yellow peppers into strips over that. I drizzle a little more olive oil over this and roast in a 325 degree oven. Covered for the first hour, then uncovered until the peppers look roasted. * I also usually sprinkle garlic and onion powder through each layer.
