In certain northern-mid-western states (usually " college/university towns " ,

there are small chain Mexican restautants by the name of " La Bamba " .  Their

signature advertizement is a logo of a person holding a HUGE burrito and the

words, " Burritos as big as your head! "

 

These chain restaurants are often " family owned " (by real Mexican people) and

the menu is " fast-food style " (that is, limited), but very tasty.  They state

that their refried beans are cooked WITHOUT any lards or oils--and these are

pinto beans.  They do, of course, offer mostly meat and chicken-based foods,

such as tacos, burritos, chalupas and tamales.

I do NOT know if the tamales are made with lard or not, as they don't offer them

in " beans-only " format. 

 

I HAVE had the burritos (wheat flour tortilla) and the option can be " with rice "

or " with vegetables " (lettuce, onion, tomato, with avocado at extra charge) and

cheese may be added, too.  The burritos are GOOD, as are the " regular " rice and

refried beans.  They offer vegetarian nachos, as well.  (I also do not know what

the ingredient content is with the corn tortillas--I do not eat those.)  I like

the fact that everything on their limited menu is made FRESH every day and they

boast that it is " never frozen " .  I would highly recommend this place to anyone

who wants a taste of flavorful and simple Mexican food! 

 

(Oh, and BTW, they have very good hot sauces and a home-made salsa that they

serve on the side!)
