Guest guest Posted January 20, 2010 Report Share Posted January 20, 2010 Black Beans Curry with Garbanzo Beans 2 tsps. canola oil 1 1/2 cups chopped onion 1 garlic clove, minced 1/2 tsp. ginger 2 tsps. curry powder 15 1/2 oz. can no added salt tomatoes 1/2 tsp. salt 1/4 tsp. rosemary 1/2 tsp. thyme 15 oz. can black beans, rinsed and drained 15 oz. can garbanzo beans, rinsed and drained 1/3 cup chopped fresh parsley 1 tbsp. lemon juice Heat oil in skillet over medium heat. Add onions and garlic and sauté until tender. Add ginger, curry powder, and tomatoes stirring until mixture is slightly thicken. Add salt, rosemary, thyme, and beans. Stir well and simmer for 5 minutes stirring occasionally. Before serving add parsley and lemon juice. Serves 8. ________________ Be smarter than spam.
