Breakfast Help

Hello to all of my friends ok here's the problem i have the hardest time with

different breakfast meals besides fruit, oatmeal, toast and just more of the

same thing or nothing at all and i know there's something else i can eat without

meat that's good for breakfast any suggestions. Thank you

i use to have problems doing breakfast in the mornings, so i make everything the

night before. Then in the morning when i am pressed for time, it can easily

either be heated up. Depending on what i make the night before.

One of my favorite breakfast methods is seasonal or frozen fresh fruit salads.

Example:

 

This morning - green apple, red apple, walnuts and assorted grapes cut to bite

size and mixed with greek yogurt. ( Can be made the night before.

 

Yesterday - frozen mixed fruit (peaches, melon, grapes, pineapple) layered in a

pretty glass topped with vanilla yogurt, topped with a sliced banana

 

The day before - fresh pineapple, coconut, chopped pecans and mandarin orange

sections (from another recipe) mixed with greek yogurt. This one I made the

night before and let the flavors meld.

Have you tried any of the vegetarian breakfast sausage, bacon, or ham

substitutes? Some of them are really good.

 

I'm stuck on the South Beach bars right now, the snack kind. Peanut butter.

I'm not always in the mood to eat first thing in the morning, but I can

throw one of those in my purse and have breakfast on the way to or at work.

breadfast burrito: whole grain tortilla, egg scrambled with salsa, refried

beans, cheese

leftover veggie pizza with a whole grin crust

 

I make and freeze pancakes on the weekend; they can be heated in the toasteroven

and use in a sandwith with banana and peanut butter:

OATMEAL BLUEBERRY PANCAKES    

1/2 cup whole wheat flour (i use whole wheat pastry flour)

1/2 cup all-purpose flour (i use whole wheat pastry flour)

2 tablespoons brown sugar

2 tablespoons baking powder

3/4 teaspoon salt

1 1/2 cups quick cooking oats

2 cups milk (plant or animal)

3 eggs, beaten (or egg substitute)

1/4 cup olive oil (I think that olive oil is too heavy; I use softened butter or

canned pumpkin)

1/2 cup frozen blueberries

Preheat a lightly oiled griddle over medium heat. In a large bowl, mix whole

wheat flour, all-purpose flour, brown sugar, baking powder, and salt.

In a small bowl, mix oats and milk. Whisk in eggs and olive oil. Pour into the

flour mixture all at once. Continue mixing until smooth. Gently fold in

blueberries.

Pour batter about 1/4 cup at a time onto the prepared griddle. Cook 1 to 2

minutes, until bubbly. Flip, and continue cooking until lightly browned.

 

This is my favorite summer breakfast: Breakfast Quinoa

NOTE: Quinoa must be rinsed extremely well or it will be bitterCook 1 cup of

quinoa in 1 cup of water and one cup of apple juice. Chill. Dice 2 small or 1

large apple small dice and add, add raisins and/or dried cranberries and

walnuts or pecans- i just add them until it looks like enough, maybe 1/2 cup of

each? Stir in vanilla yogurt to coat and make it bind together about 1- 1 1/2

cups. serve cold

Sometimes, when I feel the kids are even getting bored, I'll do soup and rice,

yogurt w/granola and/or fruit, potato pancakes (they have frozen ones at Trader

Joes) w/applesauce, french toast...
