I am so excited about the possibilities - at this point I'm on day two and I feel absolutely fabulous. It all started when I read some disturbing things about the pork industry and cut that out of my diet. I noticed that I wasn't only not bothered by the absence of pork, but I actually felt better. Then beef - same thing... and now, well, why _not_ go all the way? It seems so much healthier and feels so much better! I'm doing a bit of a juice fast (3 day) to cleanse a bit, but am savoring all your delicious recipes on here for now! Found that one thing we had to eat had some thing in it we did not know but other then that we are really watching labels and trying to stick to eating healthy! I think you'll be glad you made the move to become a vegetarian. my DH is almost a vegetarian, he is a pesco-vegetarian, = he does eat fish. On the other hand, I am becoming vegan, slowly but surely. I already don't drink milk - lactose intolerant. And I'm trying to give up cheese and butter - both are hard to do. Some days I am successful, some days I am not. But I keep on trying. In the original Laurel's Kitchen cookbook, they describe a friend of theirs who is a self-proclaimed " pancake-o-vegan " - he loves his pancakes! I can identify with that, and isn't it nice that there are no vegan or vegetarian police around - just our own conscience to deal with. Go through the files here on our site and you will find tons of great recipes, and people can refer you to great books. One book I have found especially delightful is called Veganomicon (I think I spelled that right) - great recipes in it. Nothing too exotic, just plain good cooking. Their scones are sinfully delicious. I've been making them every weekend since I got the book a couple of months ago. I've found that I have to add a little more soymilk to the recipe to get the batter right, though. Everyone here has been extremely helpful to me, so ask questions! Welcome to the group!!!
