This is my favorite tofu recipe:

General Tsao's Tofu

1 box of firm or extra firm tofu

1 egg or substitute

3/4 cup cornstarch

vegetable oil for frying

3 chopped green onions

1 Tablespoon minced ginger

1 Tablespoon minced garlic

2/3 cup vegetable stock

2 Tablespoons soy sauce

4 Tablespoons sugar

red pepper to taste

1 Tablespoon sherry (optional) (you can sub apple cider or white grape juice)

1 Tablespoon white vinegar

steamed broccoli

cooked brown rice

Drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before

to get a more chicken-like consistency, but it isn't necessary. Mix the egg with

3 tablespoons cold water. Dip tofu in egg/water

mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat

completely. Watch out that the cornstarch doesn't clump up at the bottom of the

bowl.

Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 Tablespoons

vegetable oil in pan on medium heat. Add green onions, ginger and garlic, cook

for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy

sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons water with 1 Tablespoon

cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.

Serve immediately with steamed broccoli over rice.

Remember that tofu isn't the only vegetarian protein source. I have yet to

figure out how to cook tofu at home (though I enjoy it at restaurants). I

use a lot of TVP. http://vegetarian.about.com/od/glossary/g/TVP.htm

Hello all.  I am new to this group and new to being a vegetarian - started 1/1,

but so far so good!  I cooked Tofu for the first time tonight and I liked it!  I

used soft tofu.  Put 1-1/2 tbsp of Promise butter in a skillet and sauteed some

chopped onions and green peppers.  Then drained the tofu, crushed it up

and added it in the skillet and cooked it like you would scrambled eggs.  The

recipe called for a pinch of curry, but I didn't have any so I used garlic

powder.  Sprinkled it with salt and pepper and a salt-free herb mix that I have

made.  Cooked it for around 10 minutes on med-high, turned off the stove and put

1/2 cup of cheddar cheese on top and put the lid on the skillet and let it melt

for a few minutes.  It tasted like scrambled eggs to me.  I also steamed some

mixed veggies and mixed it in with the tofu dish to make a more filling meal.

My husband thought it was gross, but he can eat his nasty leftover spam.

Looking forward

to more new, healthy ideas! - Sally from Kansas City

Hi, am from indonesia and our produce tofu and tempeh a lot. Tofu is a part of

our main dishes. So this is one of my favorite:

Ingredients:

- tofu, cut cubes 1 "

- fresh shitake mushroom (or any kind of) cut into thin slice - you can

subtitute with dry one but the taste will a bit different

- 1 fresh sweet corn (or whole kernel corn)

- spring onion

- 1/2 onion n 2 cloves garlic, slice thin

- ginger 1 "

- salt and pepper to taste

- 2tbs olive oil

- 1 fresh chili cut small

Heat the pan, add the onion and garlic, then put olive oil and salt.

Put ginger, corn, spring onion, chili until half cook then at the last put the

tofu. Ready to be serve

I have a recipe for her. It is about what Blue Koi uses.

Crispy Fried Tofu

3 tbsp nutri. yeast

2 tbsp flour

2 tsp garlic powder

1/2 teaspoon salt

1/2 teaspoon pepper

Tofu press, with tofu pressed and drained, cut into 1/2 inch cubes, mix with a

bit of garlic powder, and garlic infused olive oil after pressing, and leave in

the press for a half an hour.

toss cubes with mixture several times. Cook in a bit of safflower oil each side,

until nice a brown. tastes like cream cheese. Make sure you use a quality brand

tofu.

Just crumble a cake of firm or extra firm tofu and brown lightly in a skillet

with a little oil. Then use it as you would ground b**f. I make tacos like

this all the time. I've also made sloppy joes and Texas hash this way. Because

it is crumbled you won't have an issue with the texture.
