I made home made refried beans (boil down a can of undrained pinto beans with garlic, onion powder and fresh jalapenos and blend in processor), home made salsa (boil two tomatoes, onions, one jalapeno and garlic for about 5-7 min, put in blender with cilantro, lime juice, touch of vinegar, garlic powder and cumin), shredded cabbage, fresh tomatoes, black olives, green onions and home made guacamole (avacados blended in food processor with garlic powder, salt, and a little bit of the salsa). Fried corn tortillas in canola oil....hubby likes it all wrapped up in a whole wheat tortilla instead! There are NEVER leftovers when we make this dish! I made BBQ lentils, very lite tossed potato salad with herbs and I used Vegenaise, sliced tomatoes with Italian dressing, and some asparagus. How do you keep them from falling thru the grates on the BBQ (LOL) Seriously, if you have a recipe for them I would love to try it.
