Tofu Scramble

Tofu scramble....it's kinda like scrambled eggs, only with tofu instead.  You

put in whatever veggies you like (we use squash, zucchini, tomatoes, rainbow

bell peppers, mushrooms, and yellow and green onions.) along with a box of firm

tofu.  Add spices ( we use garlic powder, fresh garlic, parsley, salt and

pepper)  Cook until veggies are tender crisp and yummmmmm!!!!!!  You can also

make breakfast burritos out of it.

I add a little tumeric (I love tumeric!) and sometimes a little nutritional

yeast, baby spinach, mushrooms, garlic powder, dill. You can add crumbled,

cooked veg sausage as well (especially good in breakfast burritos)-I keep some

already cooked in the freezer to add. I've also made tempeh sausage crumbles to

add to recipes as well (the recipe may be in the files, I'll find it and post).

If you add some turmeric it gets a yellow color and looks more like

scrambled eggs.

Try the Morningstar Farms veggie sausage links. They are in the frozen section

of any grocery store.

We love them!

I've had those. They are delicious! I purchase those sausage links as well as

other Morningstar Farms products. Try the veggie bacon, veggie sausage patties.

Do you have a vegan store near you? Go to a Co-Op they have more variety.

The fake bacon is my favorite Morningstar Farms product (a close second is

the chik'n grillers patties). We are so lucky to have such great products

available! :)

Well, I found out why our local supermarket doesn't carry any of the Morning

Star products.  Turns out I may be the ONLY vegetarian in my city, lol, and WE

just started this year!  I guess they used to carry the veggie burgers, but

don't anymore because they had sat in the freezer for so long that they got

freezer burnt!  I have figured out how to make our own veggie burgers....Now I

am just going to have to find a way to make the sausage.....we LOVE breakfast

burritos.

I think I've seen sausage recipes in the files - look under meat

substitutes.

 

That's a shame that your grocery store doesn't carry them! I know meat

eaters who love their black bean burgers and breakfast sausages. The phrase

" no cholesterol " goes a long way to convince some meat eaters! :)

I would love to!  Everyone here really likes them.  Here's the recipe...but as

I always suggest, and do myself...please modify to your own taste!

 

2-15 oz cans black beans, drained and rinsed

1/4 c cracker crumbs

2 slices dry bread, crumbled ( I usually toast them in the toaster and it works

great!)

1 garlic clove, minced

1 green bell pepper, finely diced

1 onion, finely diced

garlic powder (I eyeball all of my seasonings...I would guess I use about 2 tsp)

black pepper (about a teaspoon)

onion powder (about a teaspoon)

salt, optional

parsley (about a teaspoon)

canola oil to cook patties in

if you're feeling a little spicy, add a little chili powder or cayenne for some

spice...if anyone has any good spices to add, please feel free to mention!

 

Sautee veggies in skillet, lightly oiled.  Mash beans with food processor or

potato masher or fork....I prefer food processor, goes faster.  Add all

ingredients to beans and mix well.  Form into patties and cook in oil in a

skillet for about two minutes on each side.  You can also place patties on a

cookie sheet lined with foil and lightly greased at 350 degrees for about 10-15

min. 

 

That's all there is to it!  I tried some veggie burgers once before...before I

was a vegetarian....I really didn't like them, but these I really like!
