Easy as all get out to make and not very expensive unless you buy the ready made stuff in a can. I make mine from Bob's Red Mills Vital Gluten flour and seasoned broth or water and cook it on a crockpot to season it -- many recipes for it in the recipe files. I introduced my family to tofu about a year ago....it took a whole year more to make the transition to vegetarian...we are not quite at the vegan point and still do milk, cheese, sour cream and such.....not sure if that will change down the road or not. Thought about trying that tofutti stuff....a little unsure...and some items are hard to find where I live. Such as, soy cheese.
