Guest guest Posted January 25, 2010 Report Share Posted January 25, 2010 Basic Lentil Soup 1/2 cup brown lentils 2 tablespoons extra virgin olive oil 1 large onion, finely chopped 3 cloves garlic, minced 1/2 cup tomato juice (homemade if desired) 4 cups water Rinse and Check the lentils. Bring the water to boil, add lentils, onion and garlic. Reduce to low heat and keep boiling for 1 hour. Add tomatoes juice and continue to boil them for another 1/2 hour. Add olive oil (as much as desired). You might want to salt and pepper when done. Serve with ground pepper, breadsticks and grated cheddar cheese if desired If you want you can mash the lentils in with a hand blender to make the soup smooth.
