You can find it at health food stores. I don't know if you have a Safeway near you, but I do know they sell it in mine where they keep the health food stuff. Guest guest Posted January 27, 2010 Report Share Posted January 27, 2010 It depends where you are, Pam. Here in the UK it is called Gluten Powder and does not seem to be readily available. I eventually found it online at www.flourbin.com. There was a minimum charge and very high postage costs so it worked out very expensive. I used it to make the chickpea patties from Veganomicon which everyone had been raving about. I thought it added an interesting chewiness to the texture but I'm not sure if I would go to the bother and expense of buying it again. I believe that it is more easily available in North America where it is sometimes used in breadmaking. Over here extra strong flour is used as bread flour and gluten is not necessary. To Christie, do you think if I bought bread flour here in the States for say a bread machine it would have the extra heaviness to it and would not have to buy the seitan? Thanks again so much. I've been vegetarian for many years, but I am still learning so many things from this group. Recipes I never thought about trying to make. It's been wonderful to learn so many new things.
