It's a take off from a recipe I got online at Bob's Red Mill site. Everyone loved it at the potluck and it's made with my favorite vegetable, roasted brussel sprouts! JANE *Note: Here are my changes to the recipe below I used less peas Added roasted brussel sprouts Didn't add the green pepper Didn't add the dill Added toasted sliced almonds Didn't use their vinagrette Dressing Quinoa Salad 2 cups rinced quinoa 4 cups water *2cups peas, lightly cooked 1 sm red onion, diced 1/2 cup diced red pepper *1/2 cup diced, green pepper 1/2 cup sliced black olives 1/4 cup chopped fresh parsley *1/4 cup chopped fresh dill 1/2 cup raisins 2cup roasted brussel sprouts, cut in half before roasting 1/4 cup toasted pine nuts 1/2 cup vinagrette dressing (I probably used a little more than this Directions: Bring 4 cups of water to a boil and add 2 cups of quinoa, bring to boil and cook over low heat 15 minutes.*(I only cooked for 13 mins) or until water is absorbed. Fluff with fork and cool on tray. When quinoa is cool, add all remaining ingredients in a large bowl, except pine nuts. Toss with 1/2 cup vinaigrette and add salt and pepper to taste. Add more dressing if desired. Garnish with pine nuts Vinigarette Dressing I used: 1/4Balsamic vinegar, 1 1/2 Tbl. olive oil, 3 cloves garlic, minced, salt and pepper to taste.
