Guest guest Posted January 30, 2010 Report Share Posted January 30, 2010 Robust Broccoli-Bean Soup 2 onions, chopped 2 cloves garlic, chopped 2 tablespoons olive oil 6 cups italian stewed tomatoes 2 teaspoons oregano 2 teaspoons rosemary 2 cans white beans, rinsed 20 oz. frozen chopped broccoli 2/3 cup parmesan Saute onion and garlic in oil in soup pot. Add tomatoes and spices, simmer 5 to 10 minutes. Add beans and broccoli, bring to boil, reduce heat, simmer 5 minutes. Add Parmesan just before serving.
