Gluten question Help! Chick pea patties

Pam, I'm not sure. Seitan is a meat substitute made from vital wheat gluten. You

can certainly make seitan by rinsing wheat flour but it seems to be a long

process and I'm not sure that that would work for for this recipe. I've not

tried it myself. Mo might have some ideas. If you can find the vital wheat

gluten you would probably be better using it.
