Guest guest Posted February 3, 2010 Report Share Posted February 3, 2010 Some time ago I was talking with a young woman who wanted to go vegetarian but it was too hard and complicated and she'd be cooking all day. I suggested she join this group and may have. I hope so. I didn't feel like the leftover chili as taco salad tonight so scrubbed two large potatoes, two onions and six carrots, lightly sprayed with olive oil and a tiny bit of sea salt. Threw them into the oven and roasted them. The potatoes had a tiny crunch on the outside and flaky and tender inside, the onions sweet and perfectly cooked and the carrots were like honey. I reheated some corn bread from the freezer. We have very happy tummies here tonight. Work time to make dinner was maybe 5 minutes. If I had to make the corn bread from scratch, it would have added about another 5 minutes. The corn bread had corn, a tiny bit of jalapenos and veggie safe cheese. Yummm. When I was a kid, Mother would make this with a huge roast beef. I always devoured the veggies and as little meat as I could get away with. (When I could get away with it I'd give it to the dog.)
