My name is Angela and I have a wonderful recipe that I would like for all of you to know Spinach Quesadillas 1 package frozen chopped spinach (10 oz) 1/2 cup ricotta cheese 1/4 cup roasted red pepper strips 1/4 cup thinly sliced green onion (7 in) flour tortillas Squeeze spinach between paper towels to completely remove excess moisture. Add spinach, ricotta cheese, red pepper and green onion to medium bowl. (I prefer sauteeing the peppers and onions beforehand, but that's up to you.) Add 1/2 tsp salt and 1/4 tsp pepper and mix lightly On one side of each tortilla, mound 2-3 Tbsp spinach mixture and lightly pack... fold tortilla gently in half Cook folded tortillas in sprayed non-stick 12in skillet over medium heat until light brown, about 5 minutes.
