I'm new with a new recipe!

Hello everyone! I am a new member of this group for vegetarians. My name is

Angela and I have a wonderful recipe that I would like for all of you to know :)

 

Spinach Quesadillas

1 package frozen chopped spinach (10 oz)

1/2 cup ricotta cheese

1/4 cup roasted red pepper strips

1/4 cup thinly sliced green onion

(7 in) flour tortillas

 

Squeeze spinach between paper towels to completely remove excess moisture. Add

spinach, ricotta cheese, red pepper and green onion to medium bowl. (I prefer

sauteeing the peppers and onions beforehand, but that's up to you.) Add 1/2 tsp

salt and 1/4 tsp pepper and mix lightly

On one side of each tortilla, mound 2-3 Tbsp spinach mixture and lightly pack...

fold tortilla gently in half

Cook folded tortillas in sprayed non-stick 12in skillet over medium heat until

light brown, about 5 minutes. Turn carefully with spatula and cook other side

for about 3 minutes and they're ready to eat! :)

Hi Angela, I'm Lawanna, have been lurking lately. Will try your recipe, sounds

tasty and easy too. You must find some extra time to look into the groups recipe

files. Get some printer paper and plenty of ink cartridges lol
