Guest guest Posted February 6, 2010 Report Share Posted February 6, 2010 I am a huge fan of portobello mushrooms and frequently get portobello sandwiches in restaurants -- sometimes they are wonderful and sometimes they're a little too dry. So I experimented: I sauteed some sweet yellow onion with some strips of zucchini and yellow summer squash and when those were still a little crisp, I added the mushroom to the pan and let it get nice and warm until it started expelling some of its juice. I sprinkled the veggies with a little salt and smoked paprika, and put everything on toasted whole wheat bread with veganaise (I love that stuff!) Good supper -- messy, but good! Add some chopped garlic fresh basil and a bit of olive oil to the veganaise.
