I just love the Amy's frozen dinner, Indian Palak Paneer. It is mine and one

of my daughters favorites. The other daughter is not an Indian food fan, but

she loves their Mexican Casserole Bowl. I picked up several of these at Super

Target yesterday. I keep a few on hand for times when we are craving these

and time is short for food preparation. Their ingredients are so healthy and

delicious.

My favorite Amy's are the Italian dishes: tortellini w/basil pesto, raviol

w/marinara sauce, & ricotta stuffed shells w/tomato sauce. Excellent, but not

vegan since they have cheese.

Also, they offer a cheese-free pizza with roasted vegetables [red onions, olive,

pepper & tomato] that is sweet from the onions, and delicious hot or cold. I

love it chilled in summer with salad. This is offered in large [12 " ] and small

individual sizes. The small ones are great to take to work for lunch if you have

an oven available. You can bake one in 15 minutes. They pizzas don't microwave

well.

If your local stores don't carry these, ask them to order some w/their next

Amy's order. Highly recommended.

I also love the Mexican casserole bowl and the cheese enchiladas. I tried

the Paneer one but I don't like the seasonings in it. They taste good and

are easy for lunches. I was surprised at how much sodium is in them though.

I love the paneer and the enchilada. They also have a breakfast one--it's

like huevos rancheros, but it's tofu. YUM!
