Guest guest Posted February 11, 2010 Report Share Posted February 11, 2010 OK, time for another vegetarian experiment......converting my p**k posole recipe to vegetarian! Made this last night.....I like it! Sauté 1 sliced (frenched) onion in olive oil. Add in 3 chopped Mexican squash (they are the lighter-skinned cousin of zucchini, if you don't have Mexican squash use zucchini!) Add 1 I head cabbage, chopped Add in as much garlic as you like :-) Add in 4 large tomatillos, cut in 1/8s. Mix well and allow to cook a little. Add in 6 cups vegetable broth, stir well & bring to boil. Add in about tablespoon of adobo sauce (the brown/red stuff chipotles in adobo come in, but you can buy it buy itself, too) Add in a generous sprinkling of adobo seasoning (powder), to taste. Mix well. Add in really huge (6 lbs, 9 oz) can of hominy, simmer about 1/2 hour. Serve/garnish with tortilla chips, shredded raw cabbage, fresh sliced lemons, fresh cilantro, fresh salsa, sour cream.
